Yes, the title says it, BLACK BEANS. Crazy, right? I just have to say, I have brought these brownies to many parties and have made them for many people, and everyone always loves them! Most people that have tried them didn’t know they had black beans in them beforehand and when they found out they were shocked, because they would’ve never guessed it, which is sort of the objective. Who wants to be able to tell that there are black beans in their brownies? No one, that’s who. Thankfully you will not be able to tell there are black beans in these brownies, because they are super dense and fudgy and just overal sooo delicous. NO lie! And as an added bonus, they are actually very healthy! OKAY enough talk, let’s get straight to it.
- 1 1/2 cup black beans (OR 15oz can drained and rinsed)
- 2 tbsp cocoa powder
- 1/3 cup agave
- 2 tbsp coconut sugar
- 3/4 cup dairy free chocolate chips
- 1/4 tsp salt
- 2 tsp vanilla extract
- 1/2 cup quick oats
- 1/4 cup coconut oil
- 1/2 tsp baking powder
- Preheat the oven to 350 F. Put all of the ingredients, except the chocolate chips, into a food processor and blend until the mixture is a smooth consistency. Melt 1/2 cup of the chocolate chips and pour into the batter. Pour batter into an 8x8 greased pan and sprinkle the remaining 1/4 cup of chocolate chips on top. Place in the oven and bake for 15-20 minutes. I usually bake for around 18, but start with 15 and check to see if they are done at that point. If they aren't quite done, bake for another 3-5 minutes. Once the brownies are done cooking, take them out and let them cool for a few minutes. And there you have it, enjoy!
